    Recipes

Country Spice Collection Dip Mixes are easy to make and so delicious!
 

Serve these stylish make ahead dips with cracked bread, Belgium endive leaves, radishes or blanched cauliflower or broccoli florets. To blanch, immerse the vegetables in boiling salted water for 30 minutes; drain and chill in cold water. Immediately drain well before serving.

Prepare Country Spice Collection classic dips according to package directions or try these innovative variations:
-Use reduced fat sour cream and reduced fat cream cheese.
-Try plain, unflavoured yoghurt as an alternative to sour cream.
-Make a tasty Herbed Yoghurt Dip by adding any Country Spice Collection Dip Mix with 2 cups of plain, unflavoured yoghurt.

For those special occasions, try using Country spice Collection Dip Mixes in one of these favourites:

Lemon Dill Dip
1 package Country Spice Collection Dill Dip Mix
125 ml cream cheese
375 ml sour cream
1 tbsp lemon juice
Finely grated peel of one lemon
6 tbsp minced pimento stuffed olives

Mix Country Spice Collection Dill Dip Mix according to directions.
Add lemon juice, grated lemon peel and minced olives.
Refrigerate for 2 hours before serving.
Serve dip in small crock lined with lettuce or kale leaves.
Excellent with large cold shrimp. Alternatively use as a sauce for whole baked salmon.

Buttermilk Garlic Dip
1 package Country Spice Collection Chive and Garlic Dip Mix
125 ml cream cheese
375 ml sour cream
5 tbsp dried buttermilk powder or ½ cup buttermilk
2 tbsp chopped parsley

Mix Country Spice Collection Chive and Garlic Dip Mix according to directions.
Add buttermilk or dried buttermilk powder and chopped parsley.
Refrigerate for 2 hours before serving.
Delicious with chips, nachos or bite sized veggies.

Asparagus Rolls
20 fresh asparagus spears
½ cup of prepared Country Spice Collection Dill Dip Mix
20 thin slices of prosciutto
Freshly ground black pepper
Radicchio leaves and lemon wedges for garnish
Chopped fresh parsley

Snap tough ends of asparagus spears. Blanch spears in boiling water and cool in ice water. Pat dry. Thinly spread prepared dip mix on each slice of prosciutto and wrap around each asparagus spear. Arrange finished spears on a platter lined with radicchio leaves and lemon wedges.

Country Spice Collection Dip Mixes can even add gourmet flavour to family classics:

Traditional Sunday Slow Cooker Roast Beef
3 tbsp Country Spice Collection Chive and Garlic Dip Mix
3-4 pound roast
2 cups of water
4 chopped carrots
2 chopped celery sticks
4 medium potatoes, quartered

Combine all the above ingredients in your slow cooker. Cover and cook on low setting for 7-8 hours. Delicious!

Seafood Butter- wonderful on grilled fish of any kind!
2 tbsp Country Spice Collection Dill Dip Mix
½ cup unsalted butter
2 tbsp chopped parsley
1 tbsp lemon juice
1 tbsp finely grated lemon peel

Whip butter in a small bowl. Beat in remaining ingredients. Cover and chill for 1 hour before serving.
Use as seasoned butter for French loaf or baguette or drizzle on steamed vegetables. Also wonderful on grilled or baked fish of any kind. Simply spread Seafood Butter on your fish before baking or grilling it. Then frequently baste the fish while it is cooking.
